Baked Fajita Taquitos (IN EGG ROLLS)

These Baked Fajita Taquitos were a HUGE hit with my family.
The bonus is that they are baked & wrapped in Egg Roll Wraps which makes them a bit healthier than the typical Taquito.

TAQ- Finale

Onions are not favored in our home and so they did not make the ingredient list however these Taquitos can be filled with any Mexican favorites of those surrounding the table to partake.

Carlsbad Strawberry Farm

A fixture along Interstate 5 in Carlsbad, California – the Carlsbad Strawberry Company has owned the farmland that can be seen from the freeway since 1948.

SB001

This local farm sells Strawberries at Farmer’s Markets around San Diego County, packages and sells them commercially by Aviara Farms, AND even better there is an area open to the public as “U-Pick”.

When in season this Farm is on my “San Diego Favorites” List.

Date Night ~ Paint Night

Blog Paint 001For my birthday one of my mother-in-laws gifted me with a Paint Night Gift Certificate for my husband and myself.

Neither.  Of.  Us.  Are.  Artists.  Not even close.  We can not even stay in the lines when we color with our three year old.

We quickly found out that we did not need to be artists to create something we actually liked; all the while laughing our way through a fun date.

SO CAL BATON HAND OFF – IT’S MY TURN

So Cal Baton LogoIt’s been a while since I ran relay in track…
A. LONG. WHILE.

However, like riding a bike you never really forget how to pass and hold on to a baton, right?  Scratch that.  Those handoffs do take a lot of practice.

Fortunately, the baton I’m holding today is all about covering some Southern California ground while taking photos and posting them on Instagram…  SHEW!!

Julie over at Girl on the Move is hosting the SoCal Baton and today is my day to share some of the San Diego area via photos.  I plan to carry the SoCal Baton to two of my favorite locations to view America’s Finest City and maybe I’ll stop in at a couple other of my favorite places along the way.

Must Have Dry Shampoo

Let’s talk Dry Shampoo.  If you have not yet been introduced, are still using Baby Powder to freshen up your locks, or have held out on purchasing a can of the good stuff this is the article for you.  Read all about my thoughts on salon grade dry shampoo down to the grocery store finds.  Dry Shampoo is a necessity for your “no wash” days, refreshing your style before an evening out, for overnight camping trips, and is a great way to keep your bangs looking fresh.

The VERY best Dry Shampoo on the market is Bumble and Bumble Hair PowderWithout a doubt.  The best.  Bumble and Bumble Hair Powder comes in a variety of hair a-wl-IMG_2042colors/shades and while some other brands leave a white residue behind (ah-hem, Big Sexy Hair), Bumble and Bumble’s dry cleansing powder does not.  Their product matches individual hair color and goes on without notice and without build up.  This dry spray does not add weight, rather it adds the perfect boost and revives some much needed volume.  Bumble and Bumble costs approximately $36 and can only be purchased at participating salons.  A can lasts quite a while and it is definitely worth the cost and the drive to the salon.

Five Minute Friday: “Messenger”

Messenger.  That is the word chosen this week by author, Lisa-Jo Baker, for Five Minute Friday.  And so the clock begins ticking as hundreds of bloggers participate in our weekly free writing flash mob…

snoopyMessenger brings to mind the great Pastors I have been blessed to know and receive the word from.

Dr George Tolman was the messenger of my childhood who was soft spoken, had an infectious smile, offered the best children’s sermon and had an impressive collection of Snoopy ties. He pastored my family through weddings, baptisms, funerals and everything in between.  Dr Tolman was a Godly man who shared a biblical message in everything he did.

The Reverend Frankie Oliver counseled me through a difficult adolescence. Her unwavering  love and most forgiving heart was one that my family counted on.  Frankie taught me to rely on God and helped me to truly understand and believe that ”with God all things are possible”.  She is a Pastor, a Counselor, and a Friend.

In more recent years my messengers have been two congregational Pastors.  Both with amazing gifts to share scripture through relatable stories and with engaging animation.  Pastor David Shirey was my Granddad’s best friend.  He dedicated and baptized my oldest son, baptized my husband, counseled my family through the loss of my Granddad, and officiated at our wedding.  And Pastor Brian Frederick-Gray dedicated my youngest son and continues to energetically serve our home church in Arizona.

These messengers have offered me weekly sermons, shared hugs & giggles, dried my tears and have been there in my life’s most memorable moments.

I thank God for these messengers.

Five Minute Friday: “Hands”

`It’s that time of the week when hundreds of bloggers log on to their computers to participate in a free writing flash mob hosted by Lisa-Jo Baker.

“Hands” is the word.  And the very first thing that came to mind when I read the Five Minute Friday prompt for this week was one of my favorite songs as a child, that I now sing daily to my little guy and one that I sang repeatedly to his big brother.

Both my boys share my fondness for this song…

I washed my hands this morning,
O, very clean and white,
And lent them both to Jesus,
To work for Him till night.

Little feet be careful
Where you take me too,
Anything for Jesus
Only let me do.

I told my ears to listen
Quite closely all day thru,
For any act of kindness
Such little hands could do.

I told my eyes to watch them
About their work or play,
To keep them out of mischief
For Jesus’ sake all day.

02.11.2011 (2)At the start of each day when my three year old and I say our morning prayer we pray that we “make it a good day”.

My hope is that me & my boys always remember to lend our hands to Jesus so that we may do good deeds for others which will undoubtedly make our days good

Might we remember the words in this song and share our hands & hearts for Jesus sake.

And my hope for you, my readers, is not only that you be on the giving end of acts of kindness but might you also receive the giving works of others through their hands and their hearts.

Happy Friday.

Note:  I copied/pasted the lyrics to the song above however I found two separate authors noted; L.M. Bateman & J.H. Rosecrans are both given credit for writing I Washed My Hands This Morning.

“Hand” Made Flag T-Shirts

aIMG_2878Last year me and my little guy made flag      t-shirts for him and his big brother.

These Patriotic shirts turned out perfect for Memorial Day, Flag Day, & Independence Day.

My teen still wears his regularly however my tot has grown a few sizes since last summer and with a Marine Boot Camp Graduation in our near future as well as Flag Day and Independence Day we made him a new one this week that fits.

To create this Flag T-shirt you will need five items …
*White T-Shirt  *Blue Fabric Paint  *Red Fabric Paint  *Paint Brush  *Small Hand

aIMG_2835aIMG_2837aIMG_2839

Instructions:  Prewash t-shirt; Place a piece of cardboard inside the t-shirt so that the paint does not bleed through to the back of the shirt; Start with the blue hand print before adding the red stripes with a paint brush; Allow time to dry before wearing and washing.  Wear with Pride.

aIMG_2849And one more suggested instruction:  if your little one is anything like mine I recommend you pull out an old t-shirt from the Goodwill box in the Garage and some washable paints to paint while you work on the red stripes.  My tot loved every minute of painting a t-shirt “just like Momma” and was extremely proud of his finished product.

Cute, right?

“Daddy’s Candy ‘stache” . . . . A Sweet Father’s Day Gift

Mommas might love receiving vases filled with flower bouquets for Mother’s Day but when Father’s Day rolls around the best vase filled bouquet for Daddy is a stash (or ‘stache) of his favorite candy.

aIMG_2831

This is one of my husband’s very favorite gifts to receive.  At his office he is known for his “candy stash” which takes up an entire desk drawer therefore this sweet gift fits him perfectly.

candy 001aWhat you’ll need:
– A Vase
– Dad’s Favorite Candy
(Skittles, Reece’s, Blow Pops & Twix for my husband)
– Craft/Popsicle Sticks or Wooden Skewers
– Ribbons for the Vase & for bows on the sticks
– Foam Paper or Card Stock
– A Little Hand

(or a few little hands; to trace & cut an “I Love You”)
– Letter Stickers
– Hot Glue Gun

This fun bouquet makes a thoughtful and personal gift.  It is one that any age child can help in creating; even if it is just to use their hand for the “I Love You” sign cut-out or selecting Daddy’s favorite candy.  This candy ‘stache is sure to please.

Wishing you a Sweet Week!

Grilled Pizza

This is a fast & easy and almost completely mess free kid friendly grilled meal.  Perfect for summer time and individually made so that each pizza is just the way you like it.

aIMG_2594Begin by making your dough.  Mix the first four ingredients in a medium size bowl.
– 1 Tablespoon Yeast
– 1 Teaspoon White Sugar
– 1 Teaspoon Table Salt
– 1 Cup Warm Water
Stir until yeast & sugar blend.

– 2 1/2 Cups Flour
– 3 Tablespoons Olive Oil
Beat Flour & Oil in with the first four ingredients then let dough rest for five minutes.
aIMG_2575
– Preferred Pizza toppings
– 2 Cups Grated Mozzarella Cheese
– 1 Jar of Pizza Sauce

Preheat BBQ Grill to a Medium heat.

Roll out dough to preferred size – smaller is easier to maneuver on the grill.  (If possible, place on baking sheet and chill for a few minutes; the cooler the dough the easier the placement is on the grill.)

aIMG_2580Place pizza dough on grill, cover with lid,  grill for 4-5 minutes.  Remove from grill.

Top the cooked side of Pizza with Sauce, Cheese, and Toppings then return to grill raw side down.  Cover & grill additional 4-5 minutes.

Tip:  For ease of use, spray spatula with cooking spray to prevent dough from sticking.

Happy Grilling!   – T
